This week again, we are spoiled with another top notch tasting of an exceptional grower Champagne....made by  Master Sommelier Arnaud Bardary !

Arnaud was born in France, in the wine producing region of Jura. He fell in love with wine at a very early age as his grand father and uncle were wine producers in the famous appellation of Chateau Chalon. After long years of studies in hospitality with additional degree in Sommellerie, as well as some harvests and vinification experiences in Burgundy, Arnaud headed to England to start his Sommelier career.

During 5 years in London, Arnaud was building experiences and passing exams. In 2015, and 3 years after his advanced sommelier degree, he was crowned with the Master Sommelier diploma !

Arnaud lives now in Hong-Kong. During 5 years, he was managing the wine program of the Black Sheep Group (a leading player on the F&B scene in the city). In 2023 Arnaud became the Head of Wholesale channel of the prestigious Watson Wine company.

Les Chemins d'Avize
Grand Cru 2012

This single parcel champagne is picked from very poor and chalky soil in the heart of the village of Avize on the parcels named “Chemin de Plivot and “Chemin de Flavigny”. 

It is gently press and goes straight into oak, and then spent 5 years on lies. 

 

It is an amazing expression of what Chardonnay is in Cotes des Blancs. 

Intense nose and complex aromatic of pear Compote, lemon custard, dried apricots, kumquat, raw almonds, marzipan, white chocolate, sweet spices, hints of smokiness, oyster shell and chalky minerality. 

Dry and firm attack on the palate, surrounded by a delicate, velvety mouth feel and incredible length.

    • Two parcels located in Avize, in the lieux dits named « Chemin de Plivot » et « Chemin de Flavigny »

    • 50 years old vines
       

  • Soils : Pure Chalk
     

  • Vintage : 2012

  • Winemaking: 

    • Gentle press and juices are sent directly to wood after clarification

    • French Oak barrel 

    • indigenous yeasts

    • Malolactic fermentation

    • 6 years aging before release

    • On lees for at least 5 years before disgorgement

    • Disgorgement done 6 months before selling
       

  • Dosage : 2,00 grs/L (Extra brut)
